A regional grocery store in our area uses boar in their hot Italian sausage. I don’t work in their packing plant, and I don’t know anybody that does so I can’t verify, but I can smell it the moment it hits the frying pan. It’s so heavily spiced I can’t taste it, but it is there.
Kudos to them I guess, I get paid .$06/lb for a cull boar and they turn it into a $6/lb brat.
