30.79% were certified as Upper 2/3 Choice or better.
Historically, the vast majority of Choice grade carcasses since the thresholds were changed 50 years ago have been Low Choice. We have recently seen a relatively rare time when the percentage of Prime carcasses now outpaces the percentage of Select carcasses. When I started collecting carcass data thirty years ago, it was not uncommon for national averages to be 30-40% Select and 2-3% Prime.
