Simocattle - 2/6/2026 18:27 My guess is it is do to hormone levels in the bull. We have salvaged more than one broken legged bull for hamburger and never regretted it. I have never salvaged a cow with a broken leg that made hamburger that I would sell to someone else. There is a difference in how they handle stress.



Concerning stress.    If I have a choice (I do) of what goes in my freezer, I will ALWAYS take a barrow over a gilt.   Just working with hogs, you can tell that the females are much more stressy than the males.   

I won't comment on whether I see the same thing in people or not.
