Steers marble better and are more tender. Bulls will get past a USDA grader if they don’t have a hump. And some young bulls don’t.

As far as feeding bulls go if you could keep them from hurting each other you would increase feed efficiency with intact bulls. Not many cattle feeders would be willing to put up with the headaches. More complaints recently with the number of rectal prolapses in steers.
