We make a similar corn salad. 2 cups frozen peas, 1 can or same amount frpzen whole kernel corn drained, 1 can white or shoepeg corn drained,1 can water chestnuts drained and chopped,1 jar pimentos drained, 8 green onions thinly sliced, 2 celery ribs chopped, 1 medium green pepper chopped, 1/2 cup white vinegar, 1/2 cup sugar, 1/4 cup vegetable oil, salt and pepper. Whisk the sugar, oil, vinegar, salt and pepper together and pour into the other combined ingredients and refrigerate at least 3 hours. | |
