We will be making another couple hundred pounds of various kinds of sausage towards the end of the month. In the past, we have used a couple different kinds of high temp cheese to enhance the flavor. I have just recently been made aware of high temp blue cheese and would like to try five pounds. I haven’t found a source at a reasonable price. Can anyone in this group help?
I always point people to Guggisberg cheese because that is where our milk goes. But I don't think they make any Blue: https://www.babyswiss.com/
