nw oh | Mostly has to do with restaurants. If you are selling a 12 oz ribeye and ribeye size gets too large you have to cut thinner. Consumer thinks they are getting screwed.
Also restaurant plans for a certain size plate to hold said 12 oz ribeye. As it gets larger no longer fits on the plate with a baked potato or whatever sides.
50 years ago before major packers and large restaurant chains mostly non issue also feeding smaller animals. But overtime larger restaurant chains demanded more uniformity so they could set all individual stores the same. I think you can see how this snowballs.
