The survey above was from 1991. Over thirty years ago, we were in a whole different market and actually, product quality and acceptance. 20-25 years of public indoctrination that fat is bad was the think of the time.
Packers complained about yg 4 and 5. I certainly understand that when these carcasses were not routinely grading choice, another Packer complaint.
