A lot we do to various plant products are things to reduce or eliminate various toxic things in the plants. Certain beans are poisonous eaten raw. But by soaking and boiling it can make them edible for most people. Even though it may not get rid of 100% of the toxins.

Making the bread the sourdough way probably reduces the amount of gluten left.

With nearly everything, the dose makes the poison. I learned the other day our body makes cyanide and uses it as a metabolic signal. Yet I think almost everyone knows cyanide is a lethal poison at extremely low levels.

I think there is a lot left to learn about a lot of things. And sometimes we think we understand more than we really do.
