Evaluations should be done where the tester is unaware of what's be served. Needless to say, a person's taste buds are honed into previous servings of whatever coffee.
When grinding coffee, that aroma can influence and skew a tester's opinion.
On a different topic many years ago, I enjoyed taste wise onion rings served at one place, maybe based in a German recipe. The owner's son years later, could not duplicate his father's recipe. Hence, besides YMMV, when a person's taste buds "lock" into a delicious taste, nothing else can "compete."
