According to James Hoffman, who is coffee expert, instant coffee CAN be very good. If in the freeze drying process they use good coffee the instant will also be good.
He says the reason most of it is not as good is that the instant market is mostly a price competitive and price conscious market. Therefore rarely are superior beans or varieties used to make it. Most of the higher value beans go to the specialty markets.
But he also says if you find a coffee you like the taste of, that is essentially all that matters. Sounds like you have.
