Could have just covered your carrots for now,    Yes, you can leave carrots in the ground over winter to store them, which actually increases their sweetness. To prevent the ground from freezing solid, cover them with 8–18 inches of insulating mulch like straw or leaves. Carrots will keep well, but should be harvested before early spring to avoid them becoming woody.
