 Pittsburg, Kansas | Wife learned this from our friends down here. Most excellent. She made some yesterday for soft tacos. They were great.
Pork panko or ground up pork rinds
Eggs
Butter
That's it!
Small batch - multiply as needed
1/4 cup pork panko
1 egg beaten
1 Tablespoon melted butter
Mix together. Using scoop place in a hot greased skillet. Prefer lard, tallow, bacon grease or butter. Place a hot greased steak press on top of the ball of batter . Press down to desired thickness.
Cook for a minute or two till done. Flip over put press back on it to brown the other side a little.
Remove.
Super simple to make but takes a while to make a big batch because all done individually.
If they get cold easy to reheat in oven or air fryer or whatever. Reheat really well. Can be made ahead of time and refrigerated. That is what Carolynn did ahead of supper for friends last night.
Delicious.
Work as good as any tortilla shell you would buy.
Extremely low in carbs. High in fat and protein.
