What is the definition of "ultra pasteurized"?? Most half and half and heavy whipping cream that you buy says "ultra pasteurized". What, exactly, is this? I do know that it will last a LOT longer in the fridge than normal pasteurized milk. I have had whipping cream setting in the back of the fridge that was still good (not sour) almost six months after "best if used by date". So, what do they do in the "ultra pasteurization" process? Does it cost that much more? Or why not ultra pasteurize all milk? Shelf life would be much longer. Just wondering.
