Coming from an area where 85+ gpg is pretty common, your 18 gpg is enviable but still quite hard (over 7 gpg recommended to soften). Here the dual tank setup would be a must, but there are differences in softener heads. Some- like the older (maybe newer also) Fleck models- use soft water from the 2nd tank during regeneration of current resin tank in use. Others may use hard water for regen. I'm guessing all single tank setups use hard water for regen. With your iron at 3 ppm, additional steps might need to be taken to decrease resin fouling over time. Some softner salts come with citric acid added-usually the green bags, or you can buy citric acid (dry) online and add to normal salt. There are other more potent additives as well for iron- citric is pretty much non toxic. Maybe softner and peroxide injection ?

You are trying to minimize fouled emitters/drinkers/nipples I assume. I am not familiar with poultry watering systems, but hard water+ iron will eventually be a constant maintenance item for any plumbing, especially small orifices/screens.
