We last looked into this in winter 2024/spring 2025. I'll attach some photos from Iowa State's field walks (June 21 and August 22, 2024). At that time Rodale Institute's market team did a deep dive and didn't find much for organic market opportunities. Weed control would be a concern as they're not as competitive as soybeans. As others have mentioned reaching out to Dr. Arti Singh is probably your best move. There was some hope at the time of an organic baby food processing/export market opening up in Iowa and mung beans are a highly desired ingredient for that, but it didn't turn out
