Mcmaster has a variety of options. Harder will be more wear resistant. Stainless may be more wear resistant but would want to know the actual alloy. If you are in a really tough spot, you can get hard facing wire or rods and weld over the head. If you were going to hard face them I would suggest grade 5 steel rather than stainless.
