Stocking rate, amount of time they are penned up, and budget all come into play. The more head that will be in there the more ventilation you need.

Is it a hobby shed for 30 pairs or a shed to make money? By that meaning, some guys build 500k shops and use them to store their camper and a bball court for the kids, some guys have 50k shed and wrench a lot in them.

Those panels look great but you would need to really be using the shed to justify the ROI.

From the description of uses a regular pole barn that can be closed tighter sounds better. Calving area more protection is better, working area more protection is better. A high sided mono slope is not the best structure for those unless you are running a lot of head through it and need ventilation. Where we are, a building like you describe would get full of snow.
