Western Oregon | We make pizza crust with 1/2 cup cheese and 1 whole egg, spread on parchment paper and bake in air fryer until golden brown. Wife has to eat dairy free so we use dairy free cheeses. Makes enough for the 2 of us, daughter doubles for the 3 of them. Then add sauce, meats and cheese. We also make a very thin crust with sourdough discard. We make small buns for burgers , dinner rolls and outdoor rolls for sausages 2-3 times a month. We eat some crackers from discard. We are low carb but not carb free. We really watch the amount daily. We don't feel cheated, just aware. We find gluten and carbs are more of a problem from processing and chemicals, we use certified organic grains, or know the source for the little we do use. Wife also has IBS. We use just enough to keep a small sourdough starter going....James | |
