South Central MN | I love carrots. I really like to just peel them and cut them into pieces a few inches long. Salt, pepper, and some olive oil and roast at 400 degrees. They are so good.
We had friends over Sunday night for a little holiday get together. I told them to come for supper and we'd have leftovers from a get together we had the day before. I also roasted some carrots and potatoes - it was a hit. Sometimes very simple meals are the best, especially after multiple holiday meals when our eating is different. | |
