101 in Washington is boring. 101 in Oregon is more on the coast but often very slow driving, or possibly damaged from winter storms. You can drop down the 5 to Kelso/Longview then head west down the river to Astoria. The air museum in McMinnville is about an hour from 101. You can go Tillamook to McMinnville to Lincoln City. You do bypass a small section of coast but not anything to exciting. You’ll want to stop at maritime museum in Astoria, climb Astor Column, stop at Fort Stevens, see the Lewis and Clark camp. Cheese factory in Tillamook. Worlds smallest harbor in Depoe Bay.
You don’t need a toll pass for California. Seattle and Tacoma are safe other than the absolutely miserable traffic.
I hope you are planning to do this over many weeks.
