Here they all smell different. To me corn silage and oat baleage smell similar, sweet, yeasty almost over fermented smell. Peas and oats, alfalfa and grass all have a different smell too. I like the smell of grain silage, but the alfalfa and grass definitely smell different, and sorghum sudangrass smells like crap to me, like offputting, but the cows love it.

To the OP, do you have a neighbor or someone with more experience you can lean on a little? If not, don’t force them to clean up “suspect” bales. Generally they’re pretty good at sorting what they don’t want if there’s anything bad.
