Doing what you are asking about is the new Gen Z fad. Buying a cargo van and trucking it out for living on the road is very popular. Glamping they call it.
I'd assume they don't play well in the wind. Do some research on the drivetrain. I think those Sprinters have some serious engine and tranny issues.
