I'm with you. Hinge it at the back of the fence in the "center" of the sort pens.
Doesn't matter if an open gate is 24" off the ground, it's an open gate. Gate just needs to be easy enough to swing from one fence of the sort pen to the other fence of the same sort pen. Not sure the widths of your alleys and pens, but from your sketch, looks like a 60 or maybe 90 degree swing that wasn't too high would be good enough.
