Apple Watch is fully capable of being used without reporting your info to other companies (including Apple). You just have to set up the apps to work that way.
Do you trust Apple to tell you the truth? Unless you wrote the software that operates your phone and watch you have no idea where your data is going no matter what setup buttons you select. If you have ever written software you know how the game is played.
