Subject: Prime rib “leftovers”

This year I decided to cook my prime rib a day ahead of time, with the plan being to serve the “leftovers” for actual dinner tomorrow. I’ve always thought the leftovers are way better the next day, more so than fresh out of the oven.

Anyway, it’s pulled from oven and on countertop under tent for a few hours, my question is then what? Planning on putting in in the fridge overnight, but should I slice it open to let it cool faster, and also warm up faster? I plan on throwing it back into the oven again late morning. But maybe cutting it open would let too much juice out.

I’m probably way over thinking this, as that’s why leftovers are leftovers because not much thought goes into them...
