Central NE | I have some friends nearby with the last name of Hoefer. They came from Montana and were Hutterites. His group came to montana from ukraine (and possibly the canadian prairie between the two). Before ukraine, the people named for the christian martyr Jacob Hutter started out in germany and austria speaking a german dielect, but immigrated to russia and ukraine at the invitation of catherine the great who was also from holstein in what is now northern germany.
this history tells it better than I could https://plainshumanities.unl.edu/encyclopedia/doc/egp.rel.026.html
they left the catholic church around the time luther did, but unlike luther, believed the bible taught of baptism when you were old enough to decide, not infant baptism. they got called anabaptists becouse others claimed they got "baptised again".
catherine the great promised land to them and no wartime service. after her death they were called up for military service and many fled the country rather than take up arms to hurt someone. under russian rule if you grew a mustache you were eligible for service, hence many amish/ mennonite/ hutterites shaved off their mustache leaving their beard which continues to this day in many places.
