 NEIA | Had a neighbor that had a hog go down when loading the semi. Broke a leg. So he called me to see if I would want it. Not being one to turn down free meat yeah. Did all the usual stuff. Shot, bleed, skin and gutted. Cut it up and tried some last night while still fresh. Thought what we had was kind of tough. Tonight let's try the loin and see what it is like. OMG. All you could do to cut and chew it. Wife didn't eat her piece she couldn't chew it. I made sure not to over cook it. What happened to this pig to make it so tough? Haven't tried other parts like shoulder or ham. Will probably grind it and see what that is like or there is a dog that will be real happy. | |
