I'm sure the steak bites are heavily marinated and tenderized to assure tenderness.
Probably using things you don't use at home.  I have a friend who used to get papain
marinated sirloin tip steaks off a food truck that supplies large users.
Made a somewhat lesser and cheaper cut more tender.
