One needs to find a boutique preserves supplier to find a cherry jam that is loaded with cherries: labor intensive to pick cherries.


They have been shaking cherries off trees for probably more than half century. The only cherries picked by hand are the sweet cherries and pick your own. Red tarts are all shook and loaded into steel water tanks. Tanks are cooled by well water then ran through the pitter and packed in 25lb plastic containers.

There’s been a quota for a while and about 40% of the crop has been shook to the ground to rot.

Lots of orchards tore out here and back to production ag. The high PH soil was good for growing them here. Places where soil was so shallow they’d blast a hole in the limestone bedrock and plant a cherry tree.
