The answer is that the oysters are different. Here is Google's answer.

East Coast vs West Coast Oysters: East Coast oysters are generally saltier, briny, and leaner with mineral/seaweed notes from the Atlantic, while West Coast oysters are often sweeter, creamier, with buttery, cucumber, or fruity flavors from the Pacific, influenced by differing water salinity, temperature, and nutrients, leading to distinct textures and merroir (sea terroir). East Coast shells are smoother and teardrop-shaped; West Coast shells are often deeper and more fluted/scalloped.
