I did that here 25 years ago. I put 2x4's horizontally "ladder style" between the 6x6 posts, 24" on center. Use a treated 2x4 for the bottom one that sits on the concrete floor.
Stapled 6" x 23" Kraft Faced insulation to the 2x4's. No need for poly when you use the kraft faced insul. But you need the kraft faced so you can staple it. Friction fit will move in a wall like that. Mine hasn't moved in 25 years. Covered the walls with white steel standing vertically.
For the ceiling I put 2x4's between the rafters 48" on center. Covered the ceiling with poly, applied white steel. Blew 18" of cellulose in the attic.
Installed a used house lp furnace for heat. I keep it at 45-48 degrees unless I'm working out there or washing vehicles. Then it gets turned up to 56-64, depending on what I'm doing.
Just wish it was bigger. Mine is 30x40x14.
