Complex carbohydrates are just strings that will be broken down into simplex during the digestion process. They also will raise insulin, just not to the amplitude a simplex sugar will but the duration will be longer as the complex carbohydrate gets broken down durinng digestion.

Eating complex carbohydrates will lower the absolute amplitude of the blood glucose spike compared to a simple sugar like sucrose (half glucose and half fructose). However over consumption of complex carbohydrates can still get a very high spike in blood sugar just because of the volume the system has to deal with.

Things like broccoli that have lots of fiber but only small amounts of carbs will digest very slowly and not raise blood sugar much as a result. By contrast something like a ripe bananna will spike blood sugar a bunch. If a diabetic eats two or three banannas they will have a major blood glucose spike problem, They can eat about all the broccoli they want without much effect.

Milk always caused a huge spike for me. Bread was bad but milk worse. If I ate a bowl of cereal with a lot of milk my blood sugar would go way out of range. Would have to take more insulin to offset such a meal.

Once I quit eating the high carb meals, I quit needing the insulin shots. Went from 4 shots a day 100 units total to zero in a couple of weeks by changing my diet. Have not used insulin for going on seven years now. Control my blood sugar entirely by not eating the foods that raise blood sugar, primarily carbohydrates. Type II diabetes IS reversable. I am not cured. Just able to control it by what I chose to eat or not eat. Way better than insulin shots or diabetic medications.

It would be extremely hard to over eat broccoli. It is very easy to over eat things laden with sugar. The major thing a low carb diet does is eliminate many highly processed foods because nearly all of them contain a high amount of carbohydrates. Highly processed carbohydrates tend to get digested rapidly and into the bloodstream quickly raising blood sugar to dangerous levels. Insulin it trying to prevent or manage these dangerous high blood glucose spikes. People like me that become insulin resistant and eventually diabetic no longer handle these spikes very well because the cells become resistant to the insulin signal because of over use. We reach peak insulin production levels from our pancrease while the insulin receptors on some cells become resistant to the insulin signal. That is the point diabetes gets diagnosed because insulin can no longer regulate blood sugar levels effectively.
Quit flooding the system with insulin (by over eating sugar and carbohydrates, even complex ones) and the system 1. has less need for insulin and 2. the resistant cells become more sensative to the insulin signal because they are not constantly being overwhelmed with it. Win, win.

Giving a diabetic insulin shots is kind of like giving an alcoholic a beer to lessen his alcoholic disease symptoms. Treating the symptoms, not the root cause of the disease. Type II diabetes is as much a disease of excess insulin as it is excess blood sugar. An insulin sensative person will have a fasting insulin level in single digits. An insulin resistant person will be in double digits often 20-30 and they are approaching diabetes diagnosis if not already there. A fasting insulin test can forewarn diabetes in in a persons future by ten or fifteen years. Yet the test is rarely ordered in the medical community unless a patient specifically asks for it.

Warning! A type II diabetic needs professional guidance if trying to wean off insulin shots. Low blood sugar levels (hypoglycemia) can be life threatening. Consult your doctor before proceeding and learn how to manage the potential problem, I knew how to do it myself safely. Many people will not know.
