As others have suggested some sort of spread from grinding. I bought some pork jerkey from Ralph's in perkings oklahoma that is great and has my wheels turning. Have bought Ralph's beef jerkey for years and is sold all over down there but the pork jerkey is something I'm going to try and not be out a fortune when I screw it up. You could try putting in a crock pot with a can of coke for the day, might loosen it up.
