East Central Arkansas
We do them sort of like skillet potatoes. Use a cast iron skillet with just enough water to keep from sticking. Cut them up like you would potatoes for frying. Add a couple tablespoons of sugar and one to two tablespoons of butter. Add salt and pepper to taste. Cook over medium heat until the water cooks away. Turn with a spatula to brown. Don't eat too many at one time. Turn the vent hood on and cracked a windows while cooking.
