Currently whole rib loins are pushing $17 a pound cost. If I sell a whole loin in the bag I charge 15-20% margin which is substantially less than other grocery margin. As soon as I open the bag the price goes up substantially just because of trim. Easily have 15-20% trim. Current ribeye price for a cut and trimmed steak is $23.99. I will let you know what my costs are in 2-3 weeks when the cattle that are getting bought at lower prices will actually hit the stores.

It’s easy to sell ribeyes for $15-17 a pound cut and wrapped , anything above that and sales plummet.

I bought a small grinder to grind 40 pound batches of burger. Our fresh ground is $6.99 and is 80%, the prepackaged ground beef we can get that’s of good quality is $8.59 a pound and and is closer to 85%.

I only carry choice or prime grade, my customers complain if I bring in select. I don’t eat select ever

Many people think grocery stores are ripping them off, just like everyone thinks farmers are all flush with cash…
