E ND | Have you talked to any foundation repair companies that do helical piers? Pretty non-invasive, dig down along the house, drive helicals, and basically bolt your foundation to the helical plates. Ultimately the house is supported by the helical piers. The guys around here do it with skid steers and mini-excavators, other than tearing up the landscaping they're in and out pretty quick. Around here due to our clay soils they're usually lifting/leveling at the same time but in the end they're supporting the house. Look for a RamJack distrobutor/contractor in your area.
You'd still want to repair the mortar in the rock foundation for cosmetic/keep the varmints out purposes but maybe that would be easier if not doing the work with an eye to structural purposes?
