100 year old house foundation

I'm living in a 100 year old farm house with brick foundation walls on a rock footing, dirt crawl space on average about 3 to 4 ft down from the floor joist. The grout is falling out of the brick in several places, at first I was going to just fix the areas that are in bad shape, then I got to looking around and I keep finding more problems areas.
I got a price on moving the house and pouring a basement, it wasn't as bad as I thought it would be, around $70000, but I would have to move out for a couple of months at least. The concrete guy also mentioned every house he has seen done this way was a mess of broken dry wall and doors that wouldn't shut or open right.
I have seen several videos on YouTube of people removing 4ft sections of foundation and pouring new concrete then moving over and doing another 4 ft so on and so forth until they do the whole foundation.

Has anyone ever added a basement or repaired a foundation a few foot at a time? Was it worth it? $300 to $400 a sqft for a new build isn't in the budget unless I win the lottery.
