Not much for modern pork. Too fat and soft. We use ground elk for red meat, bear mostly for chili. I like baked yard bird and wild turkey breast. We process retired egg layers from the egg farm, $1 ea, boil, de-bone and can. Pack a pint jar, add liquid, process it and jars of broth. Cheap, easy and good anytime....James
