Pittsburg, Kansas
One explanation of the meal times had to do withe the industrial revolution. Before people got up with the sun and ate when they had time and were hungry. The industrial revolution and factory jobs caused people's need for schedules.

Boredom is sure a problem. My wife snacks on nuts or pork rinds to keep her awake on long driving trips like we are on now.

I would say that is a great idea to not eat after 7. Unfortunately for us it just doesn't correspond with our lifestyle. Supper time is often at 7 or 8. I don't think that is good.

At home we normally eat lunch and supper. When traveling we adjust. For example this morning at hotel they had powdered eggs and sausage. So we ate breakfast. We will either skip lunch or eat a little something out of the cooler. When on cruises we eat three meals because they always have a good breakfast we can easily stay low carb. But our meals are somewhat smaller. We try to stay flexible.
