My wife likes to make excess cherry tomatoes into balsamic tomatoes- spreads tomatoes on cookie sheets lined with parchment paper, sprinkles with balsamic vinegar and other things (probably a recipe on web). Bakes in oven for a while, cools down and freezes in freezer bags. Adds to chillie, lasagna, spaghetti sauce etc... She always uses the red ones I believe, but a few days in the house should turn them red
