I have a really good salsa recipe that uses red and green tomatoes. I use tomas, but cherry tomatoes would work. You could freeze some of the green ones so they keep while you ripen some (it usually takes a couple weeks) and make salsa. Or you could ripen them all and make spaghetti sauce. Toss them in freezer bags as they ripen and do it when you have time.
