Subject: Sugar beets in Minnesota

I traveled on highway 23 over the weekend and have some questions about sugar beets. My area grows mainly corn and soybeans and I'm curious about a few things. Harvest is underway now and we saw a lot of fields that the headlands and borders were done but no activity in the field, why is this? It looks like the beets are topped just ahead of being dug, again I'm curious why? What is considered a good yield ? We seen one of the huge beet piles east of Marshall, when will that be hauled to the processor and do they all go by truck? Lots of fields were all tilled that were completed, it looks like that's common practice, some of the blackest soil I've ever seen! Thanks to anyone who can help answer my questions, I love to learn about other crops.
