As John said, the more cacao it has the less sugar it has and the more bitter it is. I don't care for real bitter chocolate unless I'm going to put it together with something else. I like the Zoet dark chocolate that Hy-Vee has- I like the 50% or 57% for eating just a piece of chocolate. The 90% is good to mix in with fruit. I also like the Godiva 72% dark chocolate that comes in the Signature bars. It has 8 pieces of chocolate per bar that are individually wrapped. That helps me not eat so much when it's a little more expensive and a little better portion-controlled.
