We eat a lot of lamb. Our lamb burger protocol is fairly simple, grill lamb burgers with nothing added. Salt to taste. Squeeze on juice of a lemon. Top with tzatziki sauce and red onion and tomato if desired.

Link for sauce, when my wife makes the sauce I request that she holds the cucumber because I do not like it. Otherwise the recipe is simple, greek yogurt, garlic, dill, a little olive oil, lemon juice. I don't like mint in tzatziki sauce either. We use that same sauce to use leftover leg of lamb roast in gyros.

edited to add, I grill lamb burgers to about 130-135F internal temp. Overcooked lamb is tasteless just like overcooked beef/pork/chicken. Do not smash the burgers to squish out all the delicious fat.
