Not mentioned: the consumer. 
As long as the consumer has pork and chicken to buy, what is the demand, and the price point to increase consumption?  I understand supply is lowest in 70 years, but what are the demand numbers? How cheap does it have to get to increase consumption? And, will cow numbers increase and hold steady when the price starts to drop?
 Many of us on NAT like our beef, but think about this like a housewife (remember them?) standing at the meat counter.
OK, think about it like a CONSUMER.
