Congratulations! 
Working on your physical health,kids education, and living a  rural life?  My suggestion would be take the kids on a daily walk, and DON'T make your first priority how far you walk. (And, keep the danged TV shut OFF). Some of my fondest memories of raising kids are me and three boys feeding our small (really small) cattle heard every evening. Small squares, fed by hand. Talking about things like noticing by the first week of January the evenings were getting longer.
You could  do a lot of teaching on such walks, but remember to do a LOT of listening.
