Over the years I've had beef processed at both USDA inspected plants and Wisconsin state inspected plants. I've watched both inspectors closely.

In my experience I feel the Wisconsin state inspectors do a better job than the USDA inspectors that I've worked with.  Maybe just my experience but I'll leave it at that.
