I'd start from: test with a good one satellite service (In our default service you have image usually every 3 days (see fresh sample attached).
Then can add high res 3.5m Planet on demand w/o subscription. We provide free trial 250 ac/1 month(you also get lidar topography, historical field potential zones).

Please check that provider clouds and shadows mask work well, otherwise you'll be bombarded with false positives alerts. Read about clouds/shadows issue.
Default drone choice is a dji mavic, if need more besides ndvi, check for hyperspectral cameras to install (micasesnse/others).
