McIntosh are super when first picked.They have that kick of tartness.It holds that only marginally.The largest market for McIntosh besides local sales is store chains in Florida.Old folks there prefer a softer apple(they get less firm as storage time increases) as biting a super crisp one is less easy as you age I guess.
